This Caldine sauce is a creamy coconut gravy infused with premium spices that is excellent with seafood, particularly Maine lobster. Caldine is a Goan-inspired dish from the West Coast of India.

Cooking directions:
- sear meat, seafood, or vegetables in 3 tbsp ghee (clarified butter) until cooked
- stir in sauce*
- *to thin sauce, add 1 cup of lite coconut milk or chicken, seafood, or vegetable stock
- simmer on low for 10 minutes
- salt to taste
- serve hot with rice and/ or naan bread
